German Crusty Rolls for TM6

Crusty German Bread Rolls (Brötchen) for Thermomix TM6

This recipe adapts the classic crusty German bread rolls for your Thermomix TM6, keeping the crispy exterior and soft, chewy interior. Enjoy them with jam, cheese, cold cuts, or as dinner rolls!

Ingredients:

  • 350 g strong white flour (bread flour)
  • 150 g warm water
  • 10 g instant yeast
  • 10 g olive oil
  • 6 g barley malt extract (optional, see notes)
  • 5 g brown sugar
  • 5 g salt

Instructions:

  1. Mix dough: Place water and yeast in the mixing bowl. Knead 30 seconds/Speed 3.
  2. Add flour, malt extract (if using), olive oil, sugar, and salt. Knead 3 minutes/Knead function. Scrape down sides and bottom of the bowl occasionally.
  3. First rise: Place dough in the mixing bowl, cover with cling wrap and a kitchen towel. Leave in a warm place for 30 minutes. Dough should double in size.
  4. Shape rolls: Divide dough into 12 equal pieces. Shape each piece into a ball, then gently roll into a sausage shape. Place seam-side down on a lightly floured surface. Repeat with remaining dough.
  5. Second rise: Cover shaped rolls with a clean towel and leave to rise for 20 minutes.
  6. Preheat oven: Set oven to 220°C (430°F) with fan. Place a baking tray filled with 1 cup of water on the bottom shelf.
  7. Bake rolls: Place risen rolls on a baking tray lined with baking paper. Make sure they are seam-side up and have enough space between them.
  8. Bake for 18 minutes. Remove water tray and bake for 2 minutes longer to crisp up.
  9. Cool and serve: Let rolls cool on a wire rack before enjoying.

Tips:

  • For a chewier crumb, use only 130 g of water.
  • If not using barley malt extract, increase the first rise time to 1 hour.
  • Store leftover rolls in a bread bin for up to 2 days. Freeze baked or unbaked rolls for up to 3 months.

Thermomix TM6 Notes:

  • Use the Knead function instead of kneading time for optimal dough consistency.
  • You can use the Turbo button in short bursts to mix the dry ingredients initially.
  • The Thermomix can generate its own heat for the warm water and first rise. Alternatively, preheat the oven to 30°C (86°F) with the door closed and place the covered mixing bowl inside for the first rise.
