Keto Sushi for the TM6

Thermomix TM6 Keto Sushi Adaptation:

Ingredients:

    • 500g cauliflower florets
    • 150g cream cheese, softened
    • 2-3 tbsp unseasoned rice vinegar
    • 1 tbsp soy sauce (or coconut aminos)
    • 5 sheets nori seaweed
    • 1 cucumber, 6 inches long
    • 1/2 avocado
    • 150g smoked salmon (or other seafood of choice)

Instructions:

    1. Rice the Cauliflower: Place cauliflower florets in the Thermomix bowl and chop 4 sec/speed 7. Pulse a few times until cauliflower resembles rice grains. Transfer to a bowl and set aside.
    1. Slice Cucumber and Avocado: Use the Thermomix slicing disc to thinly slice the cucumber and avocado. Set aside in separate bowls.
    1. Cook Cauliflower Rice: Add 1 tbsp water to the Thermomix bowl and heat 1 min/37°C/speed 2. Scrape down the sides. Add cauliflower rice and cook 4 min/Varoma/speed 2 with the measuring cup off to allow steam to escape.
    1. Season and Mix: Transfer cooked cauliflower rice to a bowl. Add cream cheese, rice vinegar, and soy sauce. Mix well with Thermomix spatula or by hand. You can also pulse briefly in the Thermomix (5 sec/speed 3) if desired.
    1. Assemble Sushi: Lay a sheet of nori on a bamboo mat covered with plastic wrap. Spread a thin layer of cauliflower rice mixture over the nori, leaving a 1-inch border at the top. Add cucumber, avocado, and smoked salmon slices to your liking.
    1. Roll and Serve: Tightly roll up the sushi using the bamboo mat, starting from the bottom and moistening the top edge of the nori to seal. Repeat with remaining ingredients. Cut each roll into bite-sized pieces and serve immediately.

Tips:

    • Adjust the amount of vinegar and soy sauce to your taste.
    • Experiment with other low-carb fillings like bell peppers, zucchini, or kimchi.
    • Dip sushi in low-carb soy sauce or wasabi for added flavor.
    • This recipe makes approximately 3 servings (9-10 pieces), depending on roll size.
